TWICE BAKED POTATO CASSEROLE RECIPE

INGREDIENTS

  • medium potatoes, baked

  • 1teaspoon garlic powder

  • 1teaspoon salt

  • 1teaspoon pepper

  • lb bacon, cooked and drained (or 1 bottle Hormel bacon pieces)

  • cups sour cream (I used light sour cream)

  • (8 ounce) package light cream cheese

  • cups shredded cheddar cheese (I used sharp cheddar)

  • 2 green onions, chopped

DIRECTIONS

  1. Scoop out and mash potatoes lightly until consistent size.

  2. Place half in greased 13x9 baking dish.

  3. Sprinkle with half the salt, pepper, garlic and bacon.

  4. Mix together sour cream and cream cheese.

  5. Top with half the sour cream and cream cheese mix, and cheeses.

  6. Repeat layers.

  7. Bake, uncovered at 350* for 25 minutes.

  8. Sprinkle with onions.
